INTERVENÇÃO EDUCATIVA: PROGRAMA DE CAPACITAÇÃO DO PROFESSOR PARA PROMOÇÃO DA ALIMENTAÇÃO SAUDÁVEL NA ESCOLA

RESUMO
O Programa Nacional de Alimentação Escolar preconiza a promoção da alimentação saudável no ambiente escolar, sendo uma das responsabilidades dos professores a realização de ações para garantir a formação de hábitos saudáveis nos estudantes. Logo, o objetivo deste estudo foi capacitar 46 professores de cinco escolas de tempo integral da rede de ensino pública e nível fundamental II da cidade de Fortaleza - CE, para desenvolver ações educativas junto aos estudantes visando o ensino e fortalecimento de hábitos alimentares saudáveis. O estudo realizado no período de fevereiro a novembro de 2016, desenvolveu-se em quatro etapas: diagnostico dos conhecimentos, atitudes e práticas sobre nutrição e alimentação; elaboração dos conteúdos e do Programa de Capacitação de Professores para o desenvolvimento de ações educativas que abordaram as seguintes temáticas: 1.Introdução a nutrição: conceitos e promoção da saúde; 2.Nutrição na adolescência: o que devo saber?; 3. A Transição nutricional e suas principais implicações e, 4.Promovendo mudanças alimentares na prática escolar; que foram abordadas com os professores e estudantes por meio de oficinas. O desenvolvimento do Programa de Capacitação foi monitorado e ao seu final foi realizado um pós-teste por meio da reaplicação do mesmo instrumento utilizado na etapa de diagnóstico para confrontar com os resultados finais obtidos. O Programa de Capacitação dos professores possibilitou a aquisição/re-significação dos conhecimentos que se refletiram em atitudes e melhores práticas de ensino dos conteúdos sobre alimentação e nutrição na escola. Além disso, as ações educativas desenvolvidas estimularam os estudantes a refletir sobre mudanças alimentares positivas, contribuindo para a promoção da saúde no ambiente escolar.

Abstract:
ABSTRACT The National School Feeding Program advocates the promotion of healthy eating in the school environment, and it is one of the responsibilities of teachers to take action to ensure the formation of healthy habits in students. Therefore, the objective of this study was to train 46 teachers from five full - time schools of the public school system and fundamental level II of the city of Fortaleza - CE, to develop educational actions among students aiming at teaching and strengthening healthy eating habits. The study carried out from February to November of 2016, was developed in four stages: diagnosis of knowledge, attitudes and practices on nutrition and food; Elaboration of contents and the Teacher Training Program for the development of educational actions that addressed the following themes: 1.Introduction to nutrition: concepts and health promotion; 2.Nutrition in adolescence: what should I know ?; 3. The nutritional transition and its main implications and, 4. Promoting food changes in school practice; Which were addressed with teachers and students through workshops. The development of the Training Program was monitored and at the end a post-test was carried out by means of the reapplication of the same instrument used in the diagnostic phase to compare with the final results obtained. The Teacher Training Program enabled the acquisition / re-signification of the knowledge that was reflected in attitudes and best practices of teaching the contents about food and nutrition in the school. In addition, the educational actions developed stimulated the students to reflect on positive food changes, contributing to the promotion of health in the school environment.
